Lemon Meringue Pie Workshop
In this workshop we are baking a Lemon Meringue Pie. As a time saver, and because it's so tasty, we will be using a biscuit base.
Here is a breakdown of the ingredient and equipment list!
Biscuit Base:
You will need a rolling pin, Mixing bowl, microwavable bowl, flan dish/cake tin (around 8" is ideal), Mixing Spoon.
Ingredients: 300g Digestive biscuits and 150g Butter.
Lemon Curd:
You will need a small pan with a glass bowl that can sit on top of the pan. You will also need a whisk. If you decide just to make the curd and not the pie, you will need a jar to keep the curd in.
Ingredients: 3 Lemons, 4 Egg Yolks, 135g Caster Sugar, pinch salt and 90g Butter
Meringue:
You will need a glass or metal bowl and an electric whisk.
Ingredients: 4 Egg Whites, 200g Caster Sugar, 2 tsp Cornflour
